AboutI love food, no I mean I LOVE food! I love looking at it, smelling it, feeling it, hearing it, and of course eating it. Like a true Filipino/Spaniard, I've been known to plot future meals on a full belly.
This site is dedicated to reconnecting with food, with a little music in between bites.
I'm not a classically trained chef. I couldn't afford culinary school. I'm self-taught. I've learned by watching hours of cooking shows, cooking in restaurants and slaving in catering kitchens. I love talking food with everyone, cooks, chefs and especially grandmas. I've cooked privately for families. I've catered corporate events and once even a movie set. I created a specialty food line called "Spred the Love" all natural gourmet spreads, and sold them at local Farmers' Markets.
For a whole year, I will document on a daily basis all my food encounters; breakfasts, dinners, restaurant reviews, recipes, food porn, Real Time cooking shows. Everything will be documented including encounters with cupcakes at 3am!
Also, I will eat and shop as local as possible for the next year. Celebrating local farmers, butchers, bakers, artisanal foods, local wineries and microbreweries, farmers' markets, and independent grocery stores. I believe some of the tastiest foods and drinks are right next to you.

I think part of cooking is about knowing how you want your food to turn out. Do I want this piece of meat to be dry and burnt or juicy, tender and crispy?
Once you know, then the next step is asking, how do I achieve that?
Humility. Always ask questions and tweak your techniques to accomplish the flavorful food in your dreams.......

I felt complete last night after making the soup. There is something about cooking or maybe the act of doing that always makes me feel satisfied. I know I could never get the same feeling from going out to eat.
Like my man Bruce Lee says, "Knowing is not enough; we must apply. Willing is not enough; we must do."
